Following a discussion of how cocoa beans grow and are harvested, Polin traces the product's history over 2,000 years and discusses current methods of processing. A photo, painting, or map, usually in full color, appears on nearly every page. Sidebars carry additional information, such as the ingredients that make up white chocolate and the meaning of "fair trade" labels on products. A glossary is appended.
